Yes, but only if you plan to cook with it afterward. Cottage cheese is loose curd sitting in liquid whey, and ice crystals drive the two apart permanently. Thawed, it looks watery and grainy on a spoon. Stirred into a hot dish, almost nobody can tell it was ever frozen.

Why the curds and the whey come apart

Fresh cottage cheese is barely held together to begin with. The curd is soft protein that was never pressed or aged, and it floats in a dressing of cream and whey rather than bonding to it. Freeze that arrangement and the water in the whey expands into crystals that shove the curds around, wringing liquid out of them at the same time.

What thaws is two things in one tub, a puddle and a pile of firmer, drier curd. Pour off the puddle and you have something close to dry curd cheese. Blend the two back together and you have something close to a thick cream. Neither one resembles what you bought.

Freezing a tub the right way

  1. Stir the whey back through before you portion anything, so the fat spreads evenly instead of sitting on top.
  2. Pack it into small containers holding the amount one recipe needs, usually a cup or two.
  3. Leave about half an inch of headspace. Dairy swells as it freezes and a full rigid tub will pop.
  4. Press plastic film onto the surface under the lid if the container is not quite full.
  5. Label with the date and the fat percentage, because thawed tubs all look identical.

What thawed cottage cheese is actually for

Thaw it in the fridge and never on the counter, and expect a full day for a pint. Then choose a job where the grain disappears completely:

  • Lasagna and baked ziti, layered between pasta under sauce
  • Pancakes and blender waffles, where the curd melts into the batter
  • Smoothies, where the blender erases the texture entirely
  • Creamy pasta sauce, buzzed smooth with pasta water and black pepper
  • Egg bakes and crustless quiche, which welcome the extra liquid

Two months is where the quality sits at its best, and beyond that the grain gets coarser rather than unsafe. A freezer holds microbes in suspension indefinitely, so flavor and mouthfeel are the things that run out. The one use the freezer takes away is the simple bowl with peaches or tomatoes on top, which needs a curd that never met an ice crystal.
